Tried and tested cooking keto : Simple pizza crust with cheddar cheese

This, I must brag.  Because it was so good and delicious that I didn't believe it wasn't really a bread pizza crust.  The crust is so easy to make and the end result is so yummy!  If you are doing a keto and missing on pizza, please try this out.  

Ingredients:
Shredded cheddar cheese - I just roughly estimated the amount and put into a big round flat mount.  So, can't really say how much exactly.

Method:
1. Pre-heat oven to 200C.

2. Spread a baking paper onto the oven pan and arrange the cheddar cheese as to how you like it.  Since I am making a pizza crust, I arrange it in a round circle, slightly flat mount, but make sure all the cheese are on each other and no holes.

3. Put into the oven for 5 minutes or until the cheese is bubbling and melted.  

4. Remove from oven and let it cool down.  Once it is cool, it will form this hard crust, but not that crunchy.  

To make into pizza
Ingredients:
2-3 big tomatoes or 15 baby tomatoes - If you are worried about the number of tomatoes, you can choose another spread instead.  For keto, supposed to reduce the tomatoes.
1/4 onion
1 clove garlic
Capsicum slices
Bacon cut into small pieces and fried with ghee
Cheese of your choice on the top

Method:
1. Blend the tomatoes and onions together.  Then in a pan, put some garlic or you can skip if you don't like the taste.  Put the tomatoes and onions mixture in and cook for few minutes.  You can also use a ready-made tomato paste but I find them always with sugar.

2. When it is a little cool, spread the tomatoes and onions mixture onto the cheddar cheese crust.  

3. Decorate the top as to how you want.  You can put any toppings you like.  I put capsicum and bacon that was already cooked previously.

4. Since I only have cheddar cheese, I put that on top.  You can use any cheese.  

5. Pop it into the oven for 2-3 minutes until the cheese on top is melted.  Remember your crust is made of cheese, so better not to keep in the oven too long or else all you have is a cheesy mess.

I am surprised how this turn out so good.  Although the base was not crunchy it was able to hold the topping well.  And taste just like the original pizza!
